The green bell pepper has a crunchy almost bitter taste to it, but is very healthy and delicious. It has firm and thick walls, which translates well for stuffed pepper recipes or to add texture to a stir fry. Like other bell peppers, they have small seeds and a hollow interior.

The green pepper holds the most bitter taste of all of the bell peppers, but it is perfect in recipes where a sweeter pepper would clash. Try it in a stir fry or a garlic chili chicken.
