- 1 Cup Lakeside Gourmet Collection Tomatoes
- 3 Tbsp Olive Oil
- 2 Garlic Cloves, minced
- 2 Boneless Chicken Breasts
- 50 ml Balsamic Vinegar
- 1 Tbsp Sugar
- 4 Fresh Basil Leaves
- 2 Slices Fresh Mozzarella
- Salt and Black Pepper to taste
Heat olive oil in a skillet over medium-high heat. Once hot, add the garlic and cook for 30 seconds until fragrant. Add the chicken and sprinkle with 3/4 tsp salt and 1/4 tsp pepper. Cook thoroughly until browned. Ensure the chicken is properly cooked all the way through. Remove from skillet and set aside.
Reduce heat to medium. Add balsamic vinegar, sugar, and stir. Once combined, add Lakeside Gourmet Collection Tomatoes. Sprinkle with salt and fresh basil (whisk gently). Let cook until the tomatoes begin to soften, about 2 minutes. Return the chicken to the skillet.
Top each chicken with a slice of mozzarella cheese. Let sit until the cheese has melted completely.
