Caprese Salad Recipe with Balsamic “Caviar”

  • 2 cups Lakeside Cocktail Tomatoes
  • 12 ounces fresh mozzarella
  • 2 cups fresh basil leaves
  • olive oil to taste
  • salt and pepper to taste

Balsamic ‘Caviar’ Pearls:

  • 1 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1 tbsp agar powder
  • 2 cups olive oil


Place a jar with olive oil in the freezer for 45 minutes.

In a small saucepan, boil balsamic, brown sugar, and agar powder over medium heat. Lower to a simmer for 2-3 minutes. Let cool.

Squeeze balsamic mixture into a dropper, and drip one droplet at a time into the chilled olive oil, creating the “caviar” pearls. Strain.

Cut the tomatoes and mozzarella into thick slices and arrange on a plate.

Drizzle with olive oil, salt, and pepper to taste.

Top with basil leaves and balsamic.
