Caprese Stuffed Chicken Recipe

  • 2 sliced Lakeside Roma Tomatoes
  • 4 Boneless Chicken Breast
  • 4 Sun Dried Tomatoes
  • 4 Mozzarella Slices
  • 4 Fresh Basil Leaves
  • 1/3 Cup Balsamic Dressing
  • 1 Tbsp Brown Sugar
  • 4 Minced Garlic Cloves
  • 1 Tbsp Olive Oil
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1/4 Cup Sun Dried Tomato Oil
  • Salt and Pepper to taste


Cut a slit into each piece of chicken. Stuff with a roma tomato slice, a mozzarella slice, a sun dried tomato, and a basil leaf. Season with salt, pepper, and tomato oil. Pierce with toothpicks to hold in place.

Heat up olive oil in a pan on medium heat. Once hot, add the chicken and cook thoroughly until browned and properly cooked all the way through.

Mix together balsamic, brown sugar, and garlic. Pour onto the cooking chicken. Scoop some of the sauce on top of the chicken to properly coat.

Serve hot and enjoy!
