Ingredients

CHERRY TOMATO PUREE

  • 1 Tbsp Butter
  • 2 Tbsp Cane Sugar
  • 2/3 Cup Lakeside Cherry Tomatoes, Halved

CHOCOLATE CAKE BATTER

  • 2 Tbsp Cane Sugar
  • 1/2 Cup Butter
  • 2 Eggs
  • 1 Cup Flour
  • 3/4 Cup Raw Cocoa Powder
  • 1 Tsp Baking Powder
  • 1/2 Cup Water
  • CHOCOLATE GANACHE
  • Two 4 Ounce Semi-Sweet Chocolate Bars
  • 1 Cup Heavy Whipping Cream

GARNISH

  • Lakeside Cherry Tomatoes, Caramelized

Preparation

CHOCOLATE GANACHE

Finely chop your semi-sweet chocolate bars and place them in a medium, heat-proof bowl.

Heat the heavy whipping cream in a small saucepan over medium heat until it begins to simmer and remove it from the heat.

Pour the cream over the chocolate and let it sit for 2-3 minutes to gently soften the chocolate.

Very slowly stir the mixture until completely combined and the chocolate has melted.

Refrigerate the ganache until it thickens, stirring occasionally so it remains even and smooth until it completely cools.

Once cooled, the ganache can be piped with a piping tip or scooped with a spoon.

CHOCOLATE MINI CAKES

Preheat the oven to 180°C / 350°F.

Melt the butter in a saucepan. Add the cane sugar and stir until it is fully incorporated.

Add the Lakeside Cherry Tomatoes into the mixture and allow them to caramelize. Once the tomatoes are done, puree the mixture in a blender or food processor and set aside.

In a mixing bowl, add the cane sugar and butter and beat until it is a smooth, creamy consistency. Add the eggs and mix until fully incorporated.

Stir in the flour, raw cocoa, and baking powder before slowly adding the water into the batter.

Add the puree to your mixture and separate the batter into two mini springform cake pans. Bake for 25-30 minutes or until fully cooked.

Cut the tops off the mini cakes and cut the cakes in half. Once the cakes have cooled, fill each layer with the chocolate ganache until all four halves are stacked.

Coat the outer layer of the mini cake with chocolate ganache and garnish with caramelized Lakeside Cherry Tomatoes.

Sprinkle icing sugar on top and enjoy!
