Cucumber & Dill Sandwiches

  • 8 ounces cream cheese softened
  • 2 tbsp Greek yogurt
  • 1 tbsp fresh dil chopped finely
  • 1 tbsp fresh chives chopped finely
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 3 to 4 mini cukes sliced thin (you can choose to peel the skin if you wish)
  • 1 loaf bread
  • Butter as needed


Mix the Greek yogurt, cream cheese, chopped chives, chopped dil, garlic powder, salt and pepper until creamy.

Spread some butter on two slices of bread. .

Apply the cream cheese mixture on top of the butter spread.

Arrange the Lakeside Mini Cukes on top of one of the bread slices.

Close with the other slice.  Do the same with other bread slices.

Cut the sandwich in half or quarters. Serve!
