- 4 Lakeside Beefsteak Tomatoes
- 1 lb potato gnocchi
- 3 tbsp olive oil
- 2 shallots, diced
- 3 garlic cloves, minced
- 2 tsp oregano
- 2 tsp rosemary
- 1/4 cup basil
- 1/4 cup fresh cream
- 1/2 cup Parmesan cheese
- Salt and pepper to taste
Heat the oil in a large sauce pan on medium. Add shallots, garlic, rosemary, and oregano. Cook for 3-5 minutes until golden and fragrant.
Roughly seed and chop Lakeside Beefsteak Tomatoes and stir in to pan. Cover the pan and lower heat, simmering the sauce for 25-30 minutes.
Bring a pot of water to a boil and cook gnocchi to package directions. Drain the gnocchi and add to the sauce pan.
Stir in fresh cream and basil. Season with salt, pepper, and Parmesan. Remove from heat and enjoy!
