- 1 Lakeside Long English Cucumber
- 1 Avocado
- 1 1/2 Cups Cauliflower Rice
- 1/2 Cup Crab Meat
- 1 Tbsp Cream Cheese
- 1 Tbsp Mayo
- 2 Tbsp Sesame Seeds
Use a vegetable peeler to thinly slice the cucumber lengthwise. Set aside on a paper towel to dry.
In a bowl, mix cauliflower rice with cream cheese. In a separate bowl, mix crab with mayo.
Lay out the strips of cucumber on a plate, overlapping slightly to form your ‘sushi wrap.’
On one end of the cucumber ‘wrap,’ spread the cauliflower rice. Top with crab meat and avocado slices.
Tightly roll the cucumber around the mixture, forming a tube. Cover with sesame seeds and slice.
