Loaded Nachos with Cocktail Tomatoes

  • ¾ Tbsp Olive Oil
  • 1 Yellow Onion
  • 2 Cloves Garlic
  • 1 Cup Lakeside Cocktail Tomatoes
  • 2 Cups Chicken Fillet
  • 1 Tsp Smoked Pepper Powder
  • 1 Tbsp Poultry Seasoning
  • 1 Tsp Cumin
  • ½ Tsp Turmeric
  • 5 Cups Corn Tortillas
  • ½ Cup Black Beans
  • 1 Red Onion, Cut into Rings
  • ½ Cup Shredded Mozzarella
  • 1 Cup Cheddar Cheese Mix


  • ½ Cup Plain Greek Yogurt
  • 1 Tsp Mustard
  • 2 Cloves Garlic
  • ¼ Cup Water
  • Juice From ½ Lemon
  • ½ Tsp Salt
  • ½ Tbsp Dried Wild Onion


  • Sliced Lakeside Cocktail Tomatoes
  • Fresh Parsley
  • Garlic Sauce


Preheat the oven to 200° C / 400° F

Prepare the ingredients by cutting the Lakeside Cocktail Tomatoes, onion, garlic, and chicken fillet into small pieces

In a pan, heat the olive oil and sauté the onion and garlic until the onion starts to soften

Add the cocktail tomatoes and chicken fillet

Add the smoked pepper powder, poultry seasoning, cumin, and turmeric

Cook for 7-8 minutes or until the chicken is fully cooked

Line a baking pan with parchment paper and spread half the corn tortillas out as evenly as possible

Add half the chicken mixture, black beans, red onion rings, mozzarella, and cheddar mix on the first layer

Repeat the same steps to create a second layer of nachos with the other half of the toppings

Bake for 10 Minutes or until the cheese is fully melted

Top with Lakeside Cocktail Tomato slices, fresh parsley, and garlic sauce

Serve immediately and ENJOY!
