Dressing:

  • 2 Tbsp Peanut Butter
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Sesame Oil

Salad:

  • ½ Cup Red Cabbage, Shredded
  • 1 Cup Lakeside English Cucumber, Spiralized
  • 1 Carrot, Grated
  • ½ Cup Mini Lettuce, Chopped
  • 1/3 Cup Raw Peanuts
  • ¼ Cup Sprouts

CUCUMBER & DILL SALAD

Dressing:

  • ½ Cup Plain Greek Yogurt
  • 2 Tbsp Fresh Dill
  • 1 Garlic Clove

Salad:

  • 1 Lakeside English Cucumber, Shredded
  • ½ Cup Croutons
  • 1 Avocado
  • ½ Cup Whole Pecans
  • 1 Tbsp Wild Garlic

ARUGULA SALAD

Pesto:

  • ½ Cup Raw Cashews
  • 1 Cup Fresh Basil
  • 1 Clove Garlic
  • ¼ Cup Olive Oil

Salad:

  • ½ Cup Arugula
  • 1 Lakeside Tomato on the Vine, Sliced
  • ½ Cup Mini Mozzarella Balls
  • ¼ Cup Green Olives
  • 1 Red Onion
  • ½ Cup Pine Nuts

SPINACH & FUSILLI SALAD

Dressing:

  • ¼ Cup Olive Oil
  • Juice from ½ Lemon
  • 1 Tsp Dried Oregano

Salad:

  • 1 Cup Fresh Spinach
  • 1 Lakeside Tomato on the Vine. Sliced
  • ½ Cup Colored Fusilli Pasta
  • 1 Lakeside Red Bell Pepper, Chopped
  • ½ Avocado

CHICKPEA & QUIONOA SALAD

  • 1 Cup Boiled Chickpeas
  • ¼ Cup Olive Oil
  • 1 Tsp Red Pepper Flakes
  • 1 Lakeside Red Bell Pepper
  • ½ Cup Boiled Mixed Quinoa
  • 1 Lakeside Yellow Bell Pepper
  • ½ Cup Feta Cheese
  • 1 Tbsp Wild Onion

Preparation

Mix the dressing and place at the bottom of your mason jar.

Layer each ingredient in order of the list.
