Organic Slicer Cucumber Bites With Blackened Shrimp

2 Lakeside Organic Slicer Cucumbers

1 tbsp parsley, chopped (for serving, optional)

For Spread:

  • 1/3 cup full-fat yogurt
  • 3 tbsp cream cheese
  • 1 cup parsley, chopped
  • 1/2 onion, chopped
  • 1 tbsp lemon juice, freshly squeezed
  • 1/2 tsp sea salt
  • 1/4 tsp chili flakes

For Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Sea salt and black pepper to taste
  • 1 tbsp olive oil
  • Toothpicks

Preparation

Place shrimp into a bowl. Add paprika and garlic powder, season with salt and pepper. Mix well and set aside.

To the cup of immersion blender add yogurt, cream cheese, parsley, onion, lemon juice, chili flakes and sea salt. Blend until smooth and homogeneous. Chill for 30 minutes.

Slice Lakeside Organic Slicer Cucumbers into ½ inch slices

Heat a tablespoon of olive oil in a frying pan over medium heat. Add shrimp in a single layer and sauté for 1,5-2 minutes per side or until pink and completely opaque.

Arrange cucumber slices on serving tray or plate. Pipe or spread a teaspoon of parsley-yogurt mixture onto each cucumber slice.

Top each slice with a shrimp and secure with a toothpick. Garnish with some chopped parsley before serving and enjoy!
