- 1 Cup Flour
- ½ Cup Butter
- ¼ Cup Plain Greek Yogurt
- ½ Cup Cold Water
- ½ Tsp Salt
- 1 Cup Parmesan Cheese
- ½ Cup Ricotta Cheese
- ¼ Cup Olive Oil
- 1 Cup Lakeside Snacking Collection Tomatoes
- Chopped basil
In a large mixing bowl, add the flour, room-temperature butter, plain Greek yogurt, cold water, and salt and mix thoroughly with your hands.
Once fully combined and pressed into a ball, wrap it in plastic wrap and refrigerate the pastry dough for one hour.
Slice the Lakeside Snacking Collection Tomatoes in half and put them aside for later.
In a medium-sized mixing bowl, mix the parmesan cheese and the ricotta cheese until you reach a smooth and creamy consistency.
When the pastry dough is finishing chilling, roll it out on a piece of parchment paper with a rolling pin.
Add the parmesan and ricotta cheese filling and spread it evenly in the center of the dough.
Cut the excess of the pastry dough so you have smooth edges to fold.
Place the halved Lakeside Snacking Collection Tomatoes in the center of the dough on top of the filling.
Fold in the edges of the pastry dough and our olive oil onto the center.
Bake at 190°C / 375°F for 45 minutes or until fully cooked.
Garnish with fresh basil and enjoy!
