Lentil Stuffed Mini Sweet Peppers

  • 1 Bag Lakeside Mini Sweet Peppers
  • 1/2 Can brown lentils
  • 1 tsp minced garlic
  • 1/2 Onion chopped
  • 2 tsp Taco seasoning
  • 2 tbsp Cilantro
  • Salt to taste
  • 6oz Cream cheese softened
  • 1 Cup shredded mozzarella
  • 3 tbsp Bread crumbs
  • 2 tsp Olive oil


Preheat oven to 350 F. Cut peppers in half remove seeds and set aside.

In a pan heat oil, saute minced garlic and onions. Let it become soft. Add the drained & rinsed looks lentils, taco seasoning, salt, cilantro and saute for 2 minutes. Set aside.

In a bowl, combine cream cheese and mozzarella. Set aside.

Take a spoonful of the lentil mixture and stuff it inside a Lakeside Mini Sweet Pepper half. Top with cheese mixture. Sprinkle bread crumbs on top. Repeat till all halved Mini Sweet Peppers are filled.

Arrange the stuffed Lakeside Mini Sweet Peppers on a baking pan. Bake at 350F for 15 – 18 minutes or until the peppers soften slightly.

Serve with your favorite dipping sauces!
