  • 450g Boiled and Shredded Potatoes
  • 2 Tbsp Flour
  • 1 Egg
  • ½ Tsp Salt
  • 1 Tsp Dried Basil
  • 1 Tsp Dried Oregano
  • ½ Tsp Black Pepper
  • 100g Cheddar Cheese (For Filling)
  • Sunflower Oil (For Frying)

  • 500g Lakeside Tomatoes on the Vine
  • 2 Tbsp Olive Oil
  • 2 Cloves of Garlic
  • 1 Yellow Onion
  • 1 Tsp Salt
  • 1 Tsp Dried Basil
  • 1 Tsp Sugar
  • Fresh Herbs for Garnish

Peel and boil the potatoes for 15 minutes. Let the potatoes cool before grating.

Add the flour, egg, and herbs to the grated potatoes and mix until fully combined.

Cut the cheddar cheese into small cubes to use for the filling.

Take half a handful of the potato mixture and place a cheddar cheese cube in the middle.

Shape and make sure you cover the cheddar cheese cube completely with the potato mixture.

In a saucepan, heat the oil and fry the tater tots until golden brown.

For the marinara sauce, peel and cut the tomatoes into cubes.

In a pan, heat the olive oil and fry the onion and garlic.

Add the cubed tomatoes, salt, and herbs. Stir in and let it cook until the water has evaporated.

The sauce can be pureed, or you can serve it with the pulp.

Sprinkle fresh herbs of your choice for garnish and enjoy!
